How To Prepare Beet Burgers

Making beet burgers at home or any other vegetarian option is very easy and delicious. Whether you want to consume them immediately or to make a reservation in the freezer, these two recipes are a good way to start.  

Veggie Beetroot Burgers

The Beta vulgaris is an annual herbaceous plant that has some varieties grown for consumption as vegetables. In fact, it has been present in food since prehistoric times and it is worth recovering it and introducing it into the daily diet, as it is a very interesting source of nutrients.

Preparing these recipes in the form of hamburgers is an original way to do it, beyond the classic salads or juices. The beet is the main protagonist and provides a very striking and special color and flavor.   Although to give it the right consistency and some nuances of flavor, it is accompanied by other ingredients.

1. Beetroot burger

In this recipe, the presence of beets stands out above all the other ingredients.  It is combined with rice and rolled oats to achieve a juicy and manageable texture with a touch of crunch on the outside.

Ingredients needed for 8 units

To prepare the hamburgers we need the following:

  • 280 grams of cooked and drained beets.
  • 100 grams of dry rice.
  • 80 grams of rolled oats.
  • Flax seeds: 1 tablespoon
  • Garlic powder: 1 tablespoon.
  • A handful of fresh aromatic herbs of your choice: parsley, coriander, basil, mint.
  • The zest of half a lemon.
  • Salt and pepper to taste.

To make the vegan mayonnaise sauce:

  • 100 milliliters of unsweetened soy drink.
  • 300 milliliters of extra virgin olive oil.
  • 1 teaspoon of lime juice.
  • The zest of 1 lime.
  • 1 teaspoon salt.

To assemble the platter:

  • Bread rolls.
  • Arugula
  • Avocado.
  • Radish sprouts.
  • Black sesame.

Step by Step

  • Cook the rice and, when it is ready, spread on a plate or tray to cool.
  • In a food processor, grind the rolled oats, flax and garlic. Add the cooked beets and rice. Blend everything lightly.  
  • To finish, add the chopped aromatic herbs, lemon zest, salt and pepper. Place in a bowl and chill in the fridge for 10 minutes.
  • Shape the hamburgers with slightly damp hands to prevent the dough from sticking. If they are going to be eaten at the moment, heat them in a griddle or frying pan with a little oil until golden brown. Or roast them in the oven at 200ÂșC for 10 to 15 minutes.
  • At the same time, prepare the mayonnaise by adding all the ingredients in a blender glass. Beat well until everything is integrated and rectify the point of lime and salt.
  • Assemble the hamburgers with the bread, the accompaniment and everything well washed down with the sauce.  

2. Beet and lentil burgers

To prepare this other version, the lentils are added to the dough. These provide a new consistency, as well as a part of vegetable protein that helps to complement the dish.

Ingredients

For the hamburgers themselves we need the following:

  • 450 grams of cooked beets.
  • 300 grams of cooked lentils.
  • 100 grams of rolled oats.
  • 3 garlic cloves.
  • 100 grams of red onion.
  • 2 medium eggs.
  • 1 teaspoon of dill.
  • Half a teaspoon of thyme.
  • A handful of fresh parsley.
  • Salt.

Ingredients for the sauce:

  • 25 grams of natural yogurt.
  • Mayonnaise: 25 grams.
  • 5 grams of mustard.
  • Half a teaspoon of dill.

To serve the dish:

  • Hamburger buns.
  • Salad sprouts.
  • Tomato.
  • Purple Onion.

Steps to follow to prepare beet and lentil burgers

  • To start preparing hamburgers, the beets have to be clean and cooked. And lentils too. In this case they can be bought already prepared.
  • In a grinding machine, mince the peeled garlic and onion. Add the beets and mash a little until it is the size of a few grains of rice. Add the lentils and blend at low speed, as some whole and some items must remain.  
  • Cover a colander with a cotton cloth or kitchen paper. Pass the mixture of lentils and beets and drain well. You can leave it for a while to lose the excess liquid or press with a spoon. It is important to drain everything before starting to work the dough.  
  • Then transfer the dough to a large bowl or bowl and add the two beaten eggs, the spices and the salt. Work well in order to obtain a consistent paste. Then, add the oat flakes little by little to finish giving the texture that allows the hamburgers to shape without breaking.
  • If possible, let the mixture sit for half an hour so that the oats can finish absorbing the remaining liquid.
  • Divide the dough into portions and form the hamburgers.  
  • Place a frying pan on the fire with a little olive oil and cook them over low heat. Do not overfill it because this way it is easier to work and turn them over.
  • Meanwhile, prepare the sauce. Mix all the ingredients well beaten until you get a homogeneous cream.  
  • To assemble and serve, cut the bread in half and place a hamburger on top of a slice. Fill with the lettuce or green shoots, a few slices of tomato and a few strips of onion. Garnish with the sauce.  

To prepare this recipe you can also use other legumes, such as chickpeas or beans if you do not have lentils. In the same way, at the time of serving the bread can be toasted and the ingredients of the accompaniment can be changed to the taste of the diners.
