Oatmeal and cheese dumplings are a vegetarian delicacy that is very nutritious, not only because of its fiber content and other essential nutrients, but also because of its considerable energy supply.

Ingredients (20 or 25 units)

  • 2 cloves of garlic
  • 1 medium onion (60 g).
  • 3 medium eggs (180 g).
  • ½ cup of chopped walnuts (50 g).
  • 1 cup of rolled oats (100 g).
  • Hot water (the necessary amount).
  • 1 small loaf of hard toasted whole wheat bread.
  • 1 cup of grated Parmesan or mozzarella cheese (100 g).
  • Condiments: salt, pepper and others (to taste).

Preparation

  1. We take the oatmeal in flakes and process it until it becomes flour. It is not necessary to sift it once it is ready.
  2. We add a little hot water to the oatmeal to hydrate it. We begin to knead and, if necessary, we add another little water.
  3. Peel the onion and grate it.
  4. Besides, we take the loaf of stale bread and proceed to crumble it completely. The smaller the crumbs are, the better.
  5. On the other hand, we peel the walnuts and chop them. They can also be pulverized, however, it is better to use them chopped, as this will give the meatballs more consistency.
  6. We break the eggs and proceed to beat them with the help of a hand mixer. The yolks and whites should be perfectly integrated.
  7. We peel the garlic cloves and chop them into small pieces.
  8. We put the oats, bread, onion and walnuts in a bowl. We add the selected seasonings together with the garlic and cheese and finally we add the beaten eggs.
  9. We knead with our hands until the ingredients are well integrated and the dough has a certain consistency.
  10. We form the meatballs and fry them in plenty of olive oil for a few minutes. Avoid leaving them too long on one side. On the contrary, you have to move them while they are frying so that they are completely golden and do not overdo it.
  11. Finally, we drain on a plate with absorbent paper to remove the excess oil.
  12. Once the meatballs are ready, we bathe them in sauce and serve.

The hot sauce for the meatballs

Ingredients

  • 5 tomatoes.
  • 2 chipotle peppers.
  • 3 garlic cloves.
  • ¼ onion (21 g).
  • ¼ glass of water (50 ml).
  • 1 glass of chicken broth (250 ml).
  • Seasonings: salt and pepper.
  • Alternatives: instead of chipotle peppers you can use hot pepper.

Preparation

  1. Peel the 3 garlic cloves and chop them into medium pieces.
  2. Chop the onion into small cubes and the tomatoes into slices.
  3. We preheat a saucepan with just a little olive oil.
  4. We place the chicken broth in the blender, the chipotle peppers, and the other ingredients.
  5. We process everything until we obtain a more or less thick homogeneous mixture, without lumps.
  6. Pour the mixture into the hot saucepan and cook for approximately 5 or 7 minutes.
  7. We check the salt and, if necessary, rectify.
  8. To finish, we pour the sauce over the meatballs.

Oatmeal meatballs, vegan

Ingredients (for 20 or 25 units)

  • 1 cup of spinach (100 g).
  • ½ cup of chopped walnuts (50 g).
  • 1 cup of oatmeal (100 g).
  • Hot water (the necessary amount).
  • 1 teaspoon of soy sauce (5 ml).
  • Condiments: salt, pepper, spices to taste.

Preparation

  1. We cut the onion into small cubes.
  2. In a skillet lightly greased with a little olive oil, sauté the onion until golden brown.
  3. Meanwhile, we peel and chop the walnuts.
  4. We mix all the ingredients in a bowl and pour a little hot water to hydrate the mixture.
  5. We add the teaspoon of soy sauce to the mixture.
  6. We knead with our hands and form the meatballs, one by one, until the desired quantity is achieved.
  7. To finish, we fry in a pan with plenty of olive oil.

Aspects to consider

Obviously, it is a very simple recipe whose flavor and juiciness will mainly lie in the hot sauce.

It should be noted that, being made from oatmeal, the oatmeal dumplings need a total cooking time of 5 minutes or even a little less.
